Ethyl acetate is a colorless liquid with a distinctive sweet aroma. It is used in nail polish removers, glues, and the decaffeination process. However, it is also a chemical irritant and should be avoided when possible. Ethyl acetate is a byproduct of the fermentation of ethanol. It can also be obtained from the esterification of ethylene or acetaldehyde. The production of ethyl acetate depends on the nature of the catalyst. Historically, it was made by distilling ethanol and acetic acid in the presence of sulfuric acid. However, today, it is produced in commercial quantities using the Tishchenko method, which condenses two equivalents of acetaldehyde in ethanol. Another commercially viable process is Fischer esterification, which involves reacting ethanol and acetic acid under acid catalysis.
